Development and description of light functional dulce de leche with coffee Ciência e Agrotecnologia
Guimarães,Ívina Catarina de Oliveira; Leão,Maria Helena Miguez da Rocha; Pimenta,Carlos José; Ferreira,Larissa de Oliveira; Ferreira,Eric Batista.
This study deals with development of a "dulce de leche" (DL) with coffee, with low caloric content and functional properties. Through rotational central composite design, eleven DLs were formulated with different polydextrose and sucralose levels. The results were analyzed by means of response surface and ANOVA. The addition of polydextrose led to the increase in moisture and water activity and reduction in the ash and soluble solids contents. In the formulations with greater levels of sucralose and polydextrose, there was an increase in the ash, acid and fiber content. Greater yield was achieved with greater concentrations of polydextrose and less substitution of sucrose by sucralose, allowing development of a new functional product with low caloric...

Effect of dietary inulin and oligosaccharides as prebiotics for weaning turbot, Psetta maxima (Linnaeus, C. 1758) ArchiMer
Mahious, A.s.; Gatesoupe, Joel; Hervy, Magali; Metailler, Robert; Ollevier, F.
Preliminary experiments were undertaken to investigate the effect of dietary inulin (Raftiline ST), oligofructose (Raftilose P95) and lactosucrose on the growth and intestinal bacteria of the marine carnivorous turbot, Psetta maxima. Turbot larvae were weaned on compound diets containing 2% Rafiline ST, 2% Raftilose P95 or 2% lactosucrose; 2% cellulose was the carbon source in the control group. The final mean weight of the group weaned with Raftilose P95 was significantly higher than those observed with the other diets. The bacterial load was highly variable in weaning turbot, especially with respect to the putative Vibrio spp. growing on TCBS agar which, in general, seemed to be dominant. Of the total load of bacterial isolates from turbot weaned on...

Probiosis: concepts and prospects Rev. Bras. Ciênc. Avic.
Barbosa,Lima R; Figueiredo-Lima,DF; Givisiez,PEN; Rabello,CBV; Gonzales,E; Silva,JHV.
The use of probiotics in animal and human feeding has been a subject of increasing interest both for the academia and the industry, mostly due to their potential positive effects on health and profitability. However, the knowledge on the composition of bacterial gastrointestinal communities in humans and animals, as well as its respective nutritional requirements, is far from being elucidated. Due to the ban of the use of antibiotic growth promoters in animal feeds, there has been an increasing interest on the utilization of probiotics to improve animal intestinal health under commercial settings. However, the possibility of horizontal transference of antibiotic-resistant genes between probiotic bacteria and pathogenic species has become a concern of...

Whey upgrading by enzyme biocatalysis Electron. J. Biotechnol.
Illanes,Andrés.
Whey is a co-product of processes for the production of cheese and casein that retains most of the lactose content in milk. World production of whey is estimated around 200 million tons per year with an increase rate of about 2%/per year. Milk production is seasonal, so surplus whey is unavoidable. Traditionally, whey producers have considered it as a nuisance and strategies of whey handling have been mostly oriented to their more convenient disposal. This vision has been steadily evolving because of the upgrading potential of whey major components (lactose and whey proteins), but also because of more stringent regulations of waste disposal. Only the big cheese manufacturing companies are in the position of implementing technologies for their recovery and...
